Savory Sindhi Biryani Recipe from Karachi and Hyderabad

To make the Biryani Masala, start by heating 1/4 cup of oil in a pan. Add 1 ½ cups of sliced onions, 1 tablespoon of cumin seeds, 15-20 whole black peppers, 4-5 green cardamoms, 2-3 cinnamon sticks, and 2 bay leaves. Sauté them until the onions turn golden brown.

Next, add 1 kilogram of chicken to the pan and cook until it turns tender. Then, add 1 tablespoon of ginger garlic paste and cook for another minute. Now, it’s time to add the flavor! Include 1 cup of sliced tomatoes, 1 tablespoon of coriander powder, 1 ½ tablespoons of red chili powder, 1 tablespoon of cumin powder, 1 tablespoon of salt, 1 teaspoon of turmeric powder, and 1 tablespoon of lemon juice. Mix everything well.

To enhance the taste, add 4-5 cubed potatoes and 6-7 aloo bukhara (plums) to the pan. Pour 1 cup of yogurt and 1 cup of water over the mixture. Cover the pan and let it simmer until the potatoes are cooked through.

Meanwhile, let’s prepare the boiled rice. In a separate pot, bring 5-6 cups of water to a boil. Add 1 tablespoon of cumin seeds, 1 ½ tablespoons of salt, 2-3 green cardamoms, 2 black cardamoms, and 1 tablespoon of lemon juice. Drain the soaked rice and add it to the pot. Boil the rice until it’s 70-80% cooked, then drain the water.

Now, it’s time to assemble the Sindhi Biryani. Take a deep cooking pot and start by adding a layer of prepared biryani masala. Then, add a layer of boiled rice. Repeat this layering process until all the masala and rice are used. Make sure to garnish each layer with green coriander, green chilies, mint leaves, and lemon slices.

For the final touch, sprinkle 1 ½ teaspoons of yellow food color and 1 teaspoon of kewra water over the rice. Cover the pot with a tight lid and let it cook on low heat for 20-25 minutes. This will allow all the flavors to meld together perfectly.
