Rice Kheer Pudding is a delectable dessert made from simple ingredients such as milk, short-grain rice, and sugar. This delightful treat offers a creamy texture and a delightful flavor that captivates the taste buds with each spoonful. Here is a simple recipe to make it for your loved ones in your kitchen.
Ingredients:
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 cup chopped nuts (almonds, cashews, pistachios, or of your choice)
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- 1 tablespoon ghee
- Raisins for garnish
Instructions:
- Rinse the basmati rice under cold water and soak it in water for about 30 minutes.
- Heat ghee over medium heat in a pan. Add the soaked and drained rice to the pan and sauté for 2-3 minutes until the rice becomes lightly golden.
- Add the whole milk to the pan and bring it to a boil. Once it starts boiling, reduce the heat to low and let it simmer. Stir the rice occasionally to prevent it from sticking to the bottom of the pan.
- Simmer the rice in milk until thoroughly cooked; the mixture thickens about 25-30 minutes.
- Add sugar to the rice-milk mixture and continue to simmer until the sugar dissolves completely.
- Stir in the chopped nuts, cardamom powder, and saffron strands. Continue to cook on low heat until the kheer reaches your desired consistency. It will thicken further as it cools.
- Once the kheer has thickened, remove it from the heat and allow it to cool to room temperature.
- If desired, garnish with more chopped nuts and raisins.
- Serve warm or chilled, as you prefer, and enjoy your homemade Rice Kheer pudding!
